Howdy Everyone!

We take great pride in the operations and facilities at Rocking Horse Ranch, reinvesting heavily in new attractions and upgrades. The following are just a few of the new ideas and major refurbishments underway at Rocking Horse for the upcoming year.


GUEST ROOM RENOVATIONS
bathroomsEvery bathroom in our Main Lodge will be completely renovated, from new floor and wall finishes to new lighting fixtures and even more luxurious towels!


NEW! SILVERADO SALOON 
 

Silverado SaloonWe are completely renovating the Silverado Saloon (previously known as the Round Up Room Night Club), which will accommodate up to 300 guests at one time while allowing more interaction between entertainers and families. Get ready to have some knee slapping hootin' n' hollerin' good old fashion fun! The Silverado Saloon will also be a great place to hold your special family function or corporate meeting.


DINING  
Dining To enhance the dining experience at Rocking Horse, Chef Michael is constantly looking for new ways to improve food quality and better serve you. Once you see what we have in store, I know you will be delighted. The dining room will be receiving several upgrades from new flatware and crockery, to new table cloths and even salt and pepper mills! Plus, enjoy our daily hors d'oeuvres and our Fall Fest Parties, now extended until November.

NEW ADDITION TO OUR WINTER FUN PARK
Ice Skates We just invested in a fleet of brand new ice skates! Free use of these skates is all apart of our all-inclusive philosophy. Strap on a pair of new skates in our lakeside heated pavilion and take a spin 'round our private lake.

LANDSCAPING AND THEMING
GardensThink our gardens are beautiful now? Wait and see what Maureen and Anthony, our in-house garden and landscape experts, have planned for next season.
Lighted Trees Rocking Horse is now known for its signature tree lights that are lit nightly from Mid-October through March. Last year we decorated dozens of trees. Anthony has officially announced that he has a surprise in store for us this Winter!


SPECTACULAR FIREWORKS DISPLAYS

FireworksStarting with a New Year's blast, we set off 6 fireworks shows a year! Our goal is to bring you the most entertaining fireworks shows any resort in the U.S. has to offer. The water displays alone are worth the view.

Horseback Riding in Winter

Our horseback riding is four season. And weather doesn't stop us-we ride through rain and snow! In case of inclement weather, we recommend bringing a warm coat and a sweatshirt. In the Winter months, bring your snow boots, good for both riding and walking through the snow. Winter is one of the most beautiful times of the year to ride! -Wrangler Scott

Chef Michael's Butternut
Squash Soup
Squash Soup
A fall traditional recipe.

2  Tablespoons Butter
Small Onion, Chopped
1  Stalk Celery, Chopped
1  Medium Carrot, Chopped
2  Medium Potatoes, Cubed
1  Medium Butternut Squash
    Peeled, Seeded, and Cubed
1  (32 Fluid Ounce) Container
    Chicken Stock
Salt and Pepper to Taste

Melt the butter in a large pot, and cook the onion, celery, carrot, potatoes, and squash 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.

Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper.
